All about tea

China – The original tea ceremony

The Chinese drink tea for over 4000 years(1). First they boiled fresh leaves and drank tea as a medicine(1). Later tea leaves had been fried and ground into the powder.

In China green tea is brewed in a big teapot for the whole family.  They put tea in a strainer which is in the teapot and wait for 30 seconds(1). The tea can be brewed 3-4 times. The Chinese tea is served without sugar or sweets. There are a lot of kinds of tea(2).

Russia - Samovar and strong tea

(1)In 1638 the russian ambassador Starikov brought some tea to Russian tsar as a gift from mongolian khan Altyn(1). It was very expensive at that time. At the beginning of the 18th century tea became a national drink. Here is a typical tea ritual in Russia:

The water was boiled in samovars(1). The best samovars were made in Tula and had different shapes(4). In a small tea pot they put some tea and added boiled water to get a strong brew. The hostess first poured the brew into the cups and then added boiled water from the samovar(1). The tea was served with honey, jam, sugar cubes and other snacks(2). In merchant families people drank tea from saucers(3). In Moscow there were a lot of taverns where people drank tea and talked(1). “Kolomna” and “London” were the most popular of them.

Great Britain - Tea with milk

(1)Black tea was very popular in Britain during the 18th century and the British founded the tradition of adding milk to black tea.

Tea - usually black tea –is served with milk (never cream) and sometimes with sugar(1). Strong tea usually served in a mug(1). People drink 6 or more cups of tea a day. The British usually drink tea between 3 pm and 5 pm. It is called the afternoon tea or 5 o’clock tea(1). Here is a typical British tea ritual(1):

  1. Boil the kettle and pour the water into a tea pot. Rinse the teapot and pour the water out.
  2. Add some tea leaves or tea bags to the pot.
  3. Add hot water and cover the pot to keep it warm.
  4. Wait 5 minutes. Pour the tea into a tea cup and add some milk and sugar.

The Japanese tea ceremony

(1)The Buddhist monks brought tea from China to Japan during the sixth century B.C. (1) The Japanese tea ceremony has strict rules. Every detail of the Japanese tea ceremony is very important. Every traditional Japanese house has a tea-room(1).
The tea-room is a clean and quiet place, there the guests leave the outside world and relax. The Japanese sometimes have tea in a tea house
(1).

They wait at the bench until the host invites them. They wash their hands and rinse their mouths with water from a small stone basin, remove their footwear and enter the tea house through a small door. They sit on the tatami(1).

The coal fire in the middle of the room is used to heat the water. The guests get small sweets. (1) They are served on special paper called kaishi which guests bring in a decorative wallet.  Then the host makes thick tea. When the guest receives the cup of tea he and the host make Bows(1). The guest makes 3 sips and passes the cup to the next one. All the guests drink tea from the same cup.  A tea ceremony can last up to four hours.

Tea is very healthy drink, but there are some useful rules:

Don’t drink tea when are you hungry.

Don’t drink too strong tea.

Don’t drink yesterday’s tea.

Don’t drink tea immediately after dinner.

Don’t drink tea before dinner.
