Dashing through the snow

In a one horse open sleigh

O’er the fields we go

Laughing all the way.

Bells on bob tails ring

Making spirits bright

What fun it is to laugh and sing

A sleighing song tonight!

Oh, jingle bells, jingle bells,

Jingle all the way

Oh, what fun it is to ride

In a one horse open sleigh!

Jingle bells, jingle bells,

Jingle all the way

Oh, what fun it is to ride

In a one horse open sleigh!

A day or two ago

I thought I’d take a ride

And soon Miss Fanny Bright

Was seated by my side

The horse was lean and lank

Misfortune seemed his lot

We got into a drifted bank

And then we got upshot.

Oh, jingle bells, jingle bells,

Jingle all the way

Oh, what fun it is to ride

In a one horse open sleigh!

Jingle bells, jingle bells,

Jingle all the way

Oh, what fun it is to ride

In a one horse open sleigh!

TREES AND PRESENTS

People began to celebrate Christmas many, many years ago. They began to decorate the evergreen tree and give presents to each other. They placed a large shining star at the top of the Christmas tree and many bright shining balls from to bottom.

1: Look! We have a nice Christmas tree too! How many beautiful toys!

“Christmas Tree”

Oh, Christmas Tree! Oh, Christmas Tree!

How lovely are your branches!

Lovely and green they always grow.

Through summer sun and winter snow.

Oh, Christmas Tree! Oh, Christmas Tree!

How lovely are your branches!

                                  CHRISTMAS STOCKINGS

In the evening of the 24th of December children hang their Christmas stocking on their beds or put them under the Christmas tree. Father Christmas (Santa Claus) puts presents into them. A Christmas stocking is not a real stocking. It is big and beautiful decorated.

1: We have the same traditions in Russia, don’t we? What is different?

2: We have the same beautiful decorated Christmas tree and presents in Russia but children find their presents under Christmas tree.

                                 CHRISTMAS PUDDING

Christmas pudding was first made many, many years ago. Now it is the highlight of Christmas dinner. Children often put holly on the pudding. Traditionally a coin is placed into the pudding. It brings good luck to a person who finds it.

                                       HOLLY AND MISTLETOE

Holly is an evergreen plant with pointed leaves and red berries. You know already that people put holly on Christmas pudding. They also use holly to decorate their homes. It is a very old tradition. People liked to look at holly and think about the spring and the sun. Mistletoe is an evergreen plant with small leaves and small white berries. On Christmas Eve there is a bunch of mistletoe in every house. Under this bunch boys kiss girls.

1: What meals do we have for Christmas dinner? Are they different or same?

2: There is roast turkey or chicken with apples on the British table but in Russia we cook goose or duck with apples and jelly with horseradish.

1: Oh, it’s a very interesting tradition. And do you know any poems about Christmas or winter?

Yes, we do.

Father Frost brings many toys

For little girls and little boys.

                   A happy New Year!

                   The day is so clear,

                   The snow is so white,

                    The sky is so bright.

I wish I were a snowman,

So tall and big and white,

I’d never have to clean my teeth,

Or go to bed at night.

                   Let’s us make a snowman,

                   Build him straight and tall,

Put his hat and jacket on

                   White winter snowflakes fall.

Sing a song of winter,

Be happy every day,

Dance around the snowman,

Come out and play.

Snowflakes fall on tree and walk.

Snowflakes fall as white as chalk.

Snowflakes fall into my hand.

Snowflakes brighten up our land!

                                        CHRISTMAS DAY

Christmas Day is on the 25th of December. British people celebrate this holiday with big dinner. Children have much fun. They play under Christmas tree, find presents in their Christmas stocking, eat Christmas pudding, watch pantomimes.

                                          BOXING DAY

Boxing Day comes after Christmas Day. It is on the 26th of December. Traditionally people put their Christmas presents into boxes. That is why the day on which they give and receive these boxes is called Boxing Day.

2: How do you celebrate Christmas?

1:  Christmas is celebrated on the January 7th (only a few Catholics might celebrate it on the 25th December). The date is different because the Russian Orthodox church uses the old 'Julian' calendar for religious celebration days. 'Father Frost' (known in Russian as 'Ded Moroz' or Дед Мороз) brings presents to children. He is always accompanied by his Granddaughter (Snegurochka). Children hold hands, make a circle around the Christmas tree and sing songs.

                                             CHRISTMAS CARD

Every English family sends and receives many Christmas cards. Traditionally there is a robin on almost every card (and you know that a robin is a Christmas bird). Sometimes there is a bunch of holly on the Christmas card. You can read on the card: “Merry Christmas!”

                                              FATHER CHRISTMAS

You know already that Father Christmas or Santa Claus comes into children’s homes on Christmas Eve. He has a white beard and white and red clothes. He is always merry. They say he comes from the North Pole. He brings presents for children.

1: Do you like Christmas traditions? What is your favourite tradition?

2: Who is the main man at Christmas day?

Santa Claus!

Ring happy bells!

Ring happy bells!

Our hearts are glad today.

It’s coming, boys

It’s almost here

It’s coming, girls

The glad New Year!

1: Let’s call Santa Claus!

Santa Claus! You are welcome!

Santa Claus.

Santa Claus: Here I am! Good morning, children! Glad to see you! And you?

Yes, we are glad to see you too!

Santa Claus: You are very friendly. Let’s play the game “Nose, nose, nose, mouth…”

Santa Claus: How beautiful is here! Children! I have got some questions for you!

-Do you learn well at school?

-Do you listen to your teachers?

-Do you help your parents?

Santa Claus: I see you are very good children. I have got some riddles for you. Guess, who are they?

2: Santa Claus! We have some presents for you!

Christmas in the wood”)

There is a beautiful house in the wood. The weather is fine and frosty. The sun is shining.

Mouse: We have Christmas soon! I will decorate my house for holiday.

Frog: Who lives in the house?

Santa Claus, do you like dancing?

Santa Claus: I like to dance.

A merry Christmas for me,

A merry Christmas for you,

A merry Christmas for everyone.

Our celebration is over. Let’s give Christmas cards your parents, guests and sing a Christmas carol together!

So we drive as fast we can go

Through the black ice and the snow

Until we see the street signs and we know

We are coming home

Good tidings we bring

  1. Serve with cream, hot custard, or brandy sauce.

Traditional British Christmas mince pies.

Prep Time: 25 minutes

Cook Time: 20 minutes

Total Time: 45 minutes

Yield: Depends on size of tin used.

Ingredients:

350g / 12oz plain / all purpose flour

Pinch of salt

225g butter / 8 oz cubed or an equal mix of butter and lard

1 beaten egg + 1 cold water as needed

1 jar of mincemeat, shop bought or home made

2 tbsp icing sugar

Preparation:

Heat the oven to 205°C/400°F/Gas 6

Make the Pastry

Place the flour, butter and salt into a large clean bowl.

Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough becoming warm.

Add the egg to the mixture and using a cold knife stir, add cold water a teaspoon at a time until the mixture binds but don't make it too wet that it is sticky.

Wrap the dough in plastic wrap and chill for a minimum of 15 minutes, up to 30 minutes.

The dough can also be made in a food processor by mixing the flour, butter and salt in the bowl of the processor on a pulse setting. When the mixture resembles breadcrumbs, add the egg slowly, through the funnel, then add water a tsp at a time until the dough comes together in a ball. Wrap in plastic wrap and chill as above.

Assemble the Pies

Choose a muffin or bun tin for the size of the pie you want. Choose from a standard 12-cup muffin tin down to small canapé size. The number of pies will depend on the size of cup you choose.

Dust a work surface lightly with a little flour and roll out two-thirds of the pastry to 1/8"/3mm thick. Cut circles to line the cups of your tin, don't worry if the pastry doesn't come to the top.

Fill the pastry lined tins 2/3 full with mincemeat.

Roll out the remaining pastry to the same thickness and cut smaller circles to fit as lids on the tarts or to be decorative, cut stars or other fancy shapes.

Dampen the edges of the tart bases with a little cold water and press the lids on. Make a small hole in the surface of each pie with a small sharp knife to allow the steam to escape (you can omit this if using star-shaped lids).

Bake in the preheated oven for 20 mins (15 mins if making canape size) or until golden brown. Remove from the oven and sprinkle with the icing sugar.

 Fruit Cake

Butter, or spray with a nonstick vegetable spray, an 8 inch (20 cm) spring form pan with a removable bottom. Line the bottom of the pan with buttered parchment paper. Also line the sides of the pan with a strip of buttered parchment paper that extends about 2 inches above the pan. Preheat oven to 325 degrees F (160 degrees C).

In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Add the brandy, juice and zest of the orange, and zest of the lemon. Then fold in the ground almonds, chopped nuts, and all the dried and candied fruits. In a separate bowl, whisk together the flour, salt, and baking powder and fold this into the cake batter.

Scrape the batter into the prepared pan and, if desired, decorate the top of the cake with blanched almonds. Place the spring form pan on a larger baking sheet. Bake in the preheated oven for 1 hour. Reduce the oven temperature to 300 degrees F (150 degrees C) and continue to bake the cake for another 1 hour 30 minutes or until a long skewer inserted into the center of the cake comes out with just a few moist crumbs. Remove the cake from the oven and place on a wire rack to cool completely. With a skewer poke holes in the top surface of the cake and brush with a little brandy. Wrap the cake thoroughly in plastic wrap and aluminum foil and place in a cake tin or plastic bag. Brush the cake periodically (once or twice a week) with brandy until Christmas. This cake will keep several weeks or it can be frozen.

Serves about 14 to 16 people.

Fruit Cake:

1 cup (227 grams) unsalted butter

1/2 cup (110 grams) light brown sugar

1/2 cup (110 grams) dark brown sugar

3 large eggs

3 tablespoons brandy plus extra for brushing the cake

Juice and zest (outer orange skin) of one orange

Zest (outer yellow skin) of one lemon

3/4 cup (65 grams) ground almonds

1 cup (100 grams) hazelnuts, walnuts, pecans, or almonds, chopped

1 1/2 pounds (680 grams) of an assortment of dried fruits (dried apricots, figs, prunes, etc.), candied and chopped mixed peel, and glace cherries (chopped into bite size pieces)

3/4 pound (340 grams) of an assortment of raisins, sultanas, currants, dried cranberries and/or cherries

2 cups (260 grams) all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt
