“Taste of Yakutia”(within Festival “Winter starts in Yakutia”)  is a popular national food  festival of the indigenous peoples of the North, Russia, Europe. What do you know about it?

The participants of "Taste of Yakutia" are public catering establishments of the city of Yakutsk, headed by their chefs, who in the allotted time period must present traditional and original dishes exclusively from natural, environmentally friendly products-from drinks to first courses of venison, beef, foal and fresh fish

The festival competition featured dishes that incorporated three cultures — Russian traditions, Yakut national products and European cuisine. These are two types of tartare, nelma salad, venison salad, hot appetizer from foal liver, hare pie, Yakut berry sorbet, and two types of dumplings.

Bear Games (Есть ли у нас?- в Якутии нет такого события, предлагаю Мунха) /“Taste of Yakutia”  is a spectacular festival, celebrated for four or five/? days. The indigenous peoples believe that a bear, killed at a ritual hunt, stays alive. It is treated like a guest. People decorate the animal’s paws and claws with beads and rings. They cover its head with a hat and put buttons or coins on its eyes and nose. All relatives and neighbours come along. Up to 300 gigs are played at the festival – songs, dances, short puppet shows and sketches. The table is laid with fish, bread, pies and berries

В рамках фестиваля «Зима начинается с Якутии» вот уже седьмой год проводится гастрофестиваль «Вкус Якутии». Нынче мероприятие состоялось в онлайн-формате и участие в нем приняли семь заведений общественного питания Якутска. По итогам жюри присудило Гран-при ресторану «Бекетовъ».

В качестве участников «Вкуса Якутии» выступают заведения общественного питания города Якутска во главе с их шеф-поварами, которые за отведенный промежуток времени должны представить традиционные и оригинальные блюда исключительно из натуральных, экологически чистых продуктов — от напитков до первых блюд из оленины, говядины, жеребятины и свежей рыбы.

Как отметила министр предпринимательства, торговли и туризма республики Ирина Высоких, гастрофестиваль является отличным маркетинговым инструментом для развития в регионе гастрономического туризма, который в последние годы набирает неплохие обороты — туроператоры во многих странах мира включают в основную программу посещения известные рестораны или организовывают отдельные гастротуры. «Гастрофестиваль «Вкус Якутии» ежегодно предоставляет возможность местным шеф-поварам продемонстрировать аутентичные и очень смелые гастрономические изыски, которые туристы не найдут ни в одном другом регионе. Отмечу, что «Вкус Якутии» — это отличный маркетинговый инструмент, направленный на развитие гастрономического туризма. Главным достоинством нашей якутской кухни является использование натуральных, экологически чистых, местных продуктов. При этом наши повара, сохраняя традиции, демонстрируют нам новые вкусовые акценты в знакомых блюдах и оригинальность подачи», — сказала глава Минпреда Якутии.

В этом году гастрофестиваль «Вкус Якутии» состоялся в онлайн-формате и в нем приняли участие семь ресторанов столицы республики — «Kitchen», «Alprana», «Крыша», «Бекетовъ», «Усадьба Атласовых», «Мацури», «Хьюстон». «Я была приятно поражена тем, насколько изысканной была подача блюд, насколько все они были вкусные. Но больше всего меня поразили коллективы заведений, которые следовали одной цели с горящими глазами, воплощая в реальность фантастические идеи», — отметила член жюри, начальник департамента предпринимательства, потребительского рынка и развития туризма окружной администрации Якутска Ирина Седова.

По итогам голосования жюри и экспертов гастрофестиваля, за лучший дегустационный сет лауреатами стали рестораны Kitchen и Alprana, оригинальную рецептуру  блюд — «Хьюстон» и «Крыша», сохранение национальных традиций — «Усадьба Атласовых», оригинальную сервировку и подачу — «Мацури». А Гран-при фестиваля этого года досталось ресторану «Бекетовъ».

«Для нас это стало полной неожиданностью. Мы открылись в феврале и принимаем участие в фестивале впервые. Команда в полном восторге, потому что победы в таких мероприятиях сильно мотивируют», — поделилась управляющий ресторана «Бекетовъ» Мария Мустяцэ. Шеф-повар заведения Андрей Мустяцэ добавил, что на фестивальном конкурсе были представлены блюда, вобравшие в себя три культуры — русские традиции, якутские национальные продукты и европейскую подачу. Это два вида тар-тара, салат из нельмы, салат из оленины, горячая закуска из печени жеребенка, пирог из зайчатины, сорбет из якутских ягод, а также два вида пельменей.

«Уверена, что в следующем году откроется ещё больше талантов, так как сегодня мы с коллегами уже обсуждали возможность расширения географии фестиваля в муниципальные образования нашей республики», — заявила министр Высоких.

Мунха в переводе на русский язык означает "Невод". Эта массовая рыбалка на которую выходят целыми деревнями, а потом делят улов. Уловы, обычно, получаются огромные, доходят до нескольких тонн.

Мунха - это не просто рыбалка, или заготовление рыбы на зиму - это целый обряд, праздник. Выходят на тонкий лед всем подселением, от самых юных ребятишек, до пожилых стариков и женщин. Все в приподнятом настроение, такое событие - радость для якутов.

Объектом ловли чаще всего является карась. Именно он входит в зимнее основное "рыбное меню" каждой якутской семьи.

Munha is not just fishing, or harvesting fish for the winter - it is a whole rite, a holiday. They go out on thin ice with the entire population, from the youngest children, to the elderly old men and women. Everyone is in high spirits, such an event is a joy for the Yakuts. «Игры Дыгына» — самое зрелищное спортивное состязание Ысыаха Туймаады

В этом году за звание победителя «Игр Дыгына» будут бороться 12 самых сильных, ловких, быстрых и подготовленных спортсменов республики: 9 спортсменов, прошедшие отборочные состязания в 2018 году, а также победитель и призеры «Игр Дыгына – 2017».

Спортивное состязание проводится в целях пропаганды здорового образа жизни, популяризации национальных видов спорта.

В течение двух дней 23-24 июня в местности «Yс Хатыҥ» спортсмены будут состязаться по семи видам:

23 июня с 18.00 часов на спортивной площадке начнутся состязания «Yс төгүл үс», «Тутум эргиир», «Мас тардыhыы»;

24 июня с 12.00 часов в Центре кумысопития «Тунах» начнутся состязания по стрельбе из лука, бегу на 400 м., борьбе хапсагай, переноске камня.

«Yс төгүл үс» — три прыжка «кылыы» (на одной ноге), припрыжка «ыстанга» (с ноги на ногу), три прыжка «куобах» (на двух ногах). Прыжки производятся с разбега, последовательно, без остановки. Места определяются по лучшему результату из трех попыток.

«Тутум эргиир» (якутская вертушка) – участники захватывают палку двумя руками с конца и упирают палку в углубление. Не меняя первоначального захвата, прогибаясь, переступая ногами, должен выполнить поворот кругом и вернуться в исходное положение. На выполнение упражнения дается одна попытка. Победителем становится тот, кто сделал большее количество поворотов.

Мас тардыhыы – соревнования проводятся без учета весовых категорий, с выбыванием после двух поражений. Положение ног на старте произвольное.

Якутская национальная стрельба их лука – дистанция мишени 35 м. Каждый участник выполняет по одному выстрелу по мишеням: «куобах» — 4 очка, «кус» — 6 очков, «тииҥ» — 10 очков, каждому участники дается по две попытки. Победителем становится тот спортсмен, который набрал наибольшее количество очков по сумме двух попыток.

Бег на 400 – количество забегов зависит от числа участников, места определяются по лучшему результату.

Борьба хапсагай – проводится без учета весовых категорий, с выбыванием после второго поражения. Соревнования проводятся по действующим правилам борьбы хапсагай.

Переноска камня – учитывается наибольшее расстояние перенесенной тяжести, при этом захват и подъем тяжести произвольный, поднятие камня на плечи запрещается. На подготовку и подъем дается две минуты.

Определение победителя в общем зачете производится по наименьшей сумме очков, набранных в каждом виде программы, чемпион и призеры отбираются на финальные состязания «Игры Дыгына – 2019».

Победители и призеры состязаний награждаются памятными медалями и ценными призами.

"Games of Dygyn" — the most spectacular sports competition of Ysyakh Tuymaada

"Tutum ergiir "(Yakut turntable) – participants grab a stick with two hands from the end and rest the stick in the recess. The winner is the one who made the most turns.

The winner in the overall standings is determined by the lowest amount of points scored in each type of program, the champion and prize-winners are selected for the final competitions of the "Dygyn Games-2019".

The Republik Sakha –Yakutia has unique historical, cultural and natural resources. This is especially true of its great history and untouched nature as well as the cultural heritage of the  indigenous Ob’ Ugric peoples (Обские угры). For this reason, the particular identity of the region has become an original brand. This branding extends to historical and architectural monuments in addition to nature’s bounty(щедрость). The diversity of fauna, fish resources and wild foods and the ways of cooking them means that many dishes and food products can only be found here. For example, whitefish, pine nuts, red bilberries (брусника), herbal tea, cometics made of deer antlers are unique to the area and are produced under the brand Made in Yakutia. Furthermore, whitefish is the only freshwater herring in the world. It is found in the Northern  parts of the  River in the Anabarskyi, Spednekolymskyi districts and is a Yakutia delicacy. The national cuisine of the Yakutian northern peoples is like a Rubik’s cube (Yakut diamond/ polar lights) multicoloured and patchy(неоднородный) because of the different ethnic groups. It changes with the seasons but it remains unique. The Northern peoples live off what nature provides them and their main food resources have always been fish, meat and vegetables. There is a lot of different fish in the rivers and lakes, the animal world in the forests is diverse, and the taiga is rich in berries and mushrooms. One of the main riches of Yakutia is the water and all its inhabitants. If all the rivers in the area were combined their total length would be 100,000 (1.5 mln) km! There are more than 42(40) kinds of fish in the rivers and lakes. That’s why the local peoples – the Evens, Evenks, Dolgans, Yukagirs are born fishermen. Fish has always been and still is the most reliable and regular source of nourishment for them. The Evens, Evenks, Dolgans, Yukagirs ate fish every day in the summer. They used to give fish to their babies so they would learn the taste of fish at their mothers’ knees. They also use fish as presents and treats for their guests. Hunting was a year-round source of meat for the the Evens, Evenks, Dolgans, Yukagirs peoples, too. The elk is the biggest animal in the northern latitudes followed by the reindeer and their meat is a popular food. The main way to cook elk or reindeer meat was to boil it. People used to eat the meat with grease, taken from the boiling broth with pieces of bread. From time to time the Evens, Evenks, Dolgans, Yukagirs had to hunt bears. It is a sacred animal and so every part of it was used and every trace of the kill was put into the fire even the blood-stained snow or soil. The the Evens, Evenks, Dolgans, Yukagirs never stored the bear meat (called ? vatnut), they ate it all at once in a special Bear Festival. Herbal tea is a popular drink among the the Evens, Evenks, Dolgans, Yukagirs peoples. Herbs are put into boiling water separately or together with tea. People use ivan-tea/red bilberry leaves rosebay and leaves of different berries such as blackcurrant, bilberry, strawberry and red bilberry. Root and sepal of the wild rose(чашелистик дикой розы )also are used. Another natural drink loved by the Northern peoples is birch juice or birch sap.(,березовый сок) This sweet, nutritious, refreshing drink is considered to be healing ( исцеляющий), but it is only possible to collect it in spring time.
